Homemade Oreos
Ingredients

Bring the butter to room temperature and beat until whipped. Add brown sugar and granulated sugar and mix until creamed (about 5 minutes). Add egg and vanilla and mix well. In a separate bowl combine flour, cocoa powder, baking soda, and salt. Add this to the butter mixture and beat well.
Flatten the dough into some tin-foil and cool for at least 30 minutes in the fridge.
After dough has cooled preheat the oven to 350°F. Divide dough into 20g pieces and roll into balls. Flatten the balls slightly and place on parchment lined baking sheets. Bake for 6-8 minutes or until you begin to see the surface cracking.

Bring the butter to room temperature and whip until creamy. Add powdered sugar and vanilla and beat until smooth. Should be thick. Transfer to gallon plastic bag or piping bag. When cookies have cooled pipe the filling on half of the cookies. Place remaining cookies on top and enjoy!
